Home-made Peanut Butter Cups!

I had such a lovely Easter weekend! I did some baking, I did LOTS of yoga and did a fair bit of eating too (what’s new?!) 🙂

First up was these absolutely addictive Peanut Butter Cups… they took all of 20 minutes to make and were sooooo good. I have listed the ingredients below and also included the “healthier” version too, using coconut oil and stevia instead of the butter and golden syrup and icing sugar I used. One day I will do a full on healthy treat post – hold me to that! 🙂

Ingredients List

Bottom Layer
100g Butter, melted (4 Tablespoons melted Coconut Oil for healthier version)
130g Peanut Butter (use the Meridian or similar one for healthiest version)
2 tsp vanilla extract
40g cocoa powder
4 Tablespoons Golden Syrup (14 drops of liquid stevia for healthier version)

Top Layer
100g Butter, melted (4 Tablespoons melted Coconut Oil for healthier version)
130g Peanut Butter (use the Meridian or similar one for healthiest version)
2 tsp vanilla extract
70g Icing Sugar (3 drops liquid stevia for healthier version)

1. Line your normal cupcake / muffin tray with 12 liners… use fairy cake sized ones as opposed to muffin sized!

2. Melt your butter / coconut oil then add the peanut butter and mix well, you might need to add the PB to the butter in the microwave for a few seconds to melt it slightly too. Add the vanilla extract and golden syrup or stevia and mix. Lastly, sieve in the cocoa powder… make sure to sieve it in or you will have big lumps of bitter cocoa powder in your mixture! Now stir it all together.

3. Divide the mixture between all your cake liners… they should be approx half full. Put the tray in the freezer on a flat surface and leave to set there for about 10 minutes while you make the top layer.

4. For the bottom layer do the same melting process then sieve in your icing sugar (or add the stevia) and mix well. Take your tray from the freezer and divide on top of the chocolate mixture. Throw it back in the freezer for about 10 minutes and they should be done!
