I have a serious sweet tooth and no matter how hard I try I just can’t seem to kick my chocolate cravings. This week I’m making a conscious effort to cut back a little bit on coffee and chocolate… this has resulted in a banging headache on day 1 and me pulling out the food processor to make something slightly more healthy than my usual chunk of Rocky Road for an evening snack!
There’s still a small bit of chocolate involved so not completely virtuous, but the rest of the ingredients are pretty healthy and they definitely take the edge off the withdrawals 🙂
1 pack (~227g) dates, pitted (if dry, soak in warm water for 10 minutes & drain)
3 Tablespoons peanut butter – I used the natural Meridian one
50g dark chocolate, roughly chopped
1 Tablespoon chia seeds
1. Pulse dates in a food processor or blender until they’re in small pieces.
2. Add the seeds, oats, chocolate, and peanut butter and pulse until well combined but with a little bit of chunk left to the texture.
3. Roll into small balls using the palm of your hands to shape. You should get about 15 balls from the portion of mix.
Throw them in the fridge for a little bit to set and then enjoy!
