Giant Chocolate Chip Cookies

No, no โ€“ Iโ€™m not trying to be all American and calling them cookies when theyโ€™re just plain biscuits! These are actually serious, proper, gooey, amazing, gigantic cookies…. biscuit just doesnโ€™t cut it for these bad boys.

I know, I just KNOW, that everyone loves the smell of the big chunky cookies in Marks and Spencer and these are the closest thing I could find to them. I warn you โ€“ they are dangerously addictive and like every single other thing that Iโ€™ve ever baked … they are very bad for you! But they taste very good so thatโ€™s all that really matters ๐Ÿ™‚

Theyโ€™re really easy to make, just make sure that you have a couple of baking trays as they need to be really well spread out …. youโ€™ll put a golf ball sized mixture into the oven and itโ€™ll melt and spread to about 3 times the size so spread them out well!

Ingredients List

100g caster sugar
100g butter (margarine wonโ€™t do, theyโ€™ll be a flimsy mess if you use marg โ€“ real butter all the way!) Try to have the butter at room temperature, makes it easier to mix.
1 tablespoon golden syrup
150g self raising flour
About 90g of mixed dark / milk / white choc chunks, whatever your preference. I have to state here, donโ€™t use the tiny little chocolate chips, these cookies need big chunks. Either try to get the Dr. Oetker Chocolate CHUNKS as opposed to chips or else just buy the large bars of chocolate in the supermarket and roughly chop them up.

1. Preheat the oven to 160ยฐC, in my fan oven I put it about 140ยฐ.

2. In your mixing bowl, with a fork mix together the butter and sugar.

3. Add the golden syrup and mix together well.

4. Sieve in 75g of the flour and mix well. Now add in your chocolate chunks and mix again.

5. Sieve and mix the last 75g of flour.

6. Gets a little messy now…. if youโ€™ve a nice snazzy diamond ring on your finger take it off or itโ€™ll end up covered in cookie mix!
Arrange on a baking tray lines with baking paper / parchment in about 10 โ€“ 12 round blobs.

DO NOT flatten them out, even though youโ€™re putting them in the oven like a little ball, theyโ€™ll spread right out so donโ€™t be tempted to flatten them or theyโ€™ll be flat as a pancake by the time theyโ€™re cooked.

Remember what I said about how much they expand. Youโ€™ll only fit about 4/5 on each baking tray โ€“ otherwise theyโ€™ll melt down and start to join up when baking.

7. Cook for about 12-15 mins then take out and allow to cool completely.

8. Hardest part of the lot โ€“ holding yourself back from eating the whole batch!!

I threw a batch of these into my good friend’s birthday present over the weekend and they went down a treat!
