Another quick and oh so simple energy ball recipe! These are different to my other ones in that there’s no chocolate or peanut butter involved , so they are a little lighter and the lemon adds a nice zingy freshness!
100g porridge oats.
8 tbsp desiccated coconut (plus extra for rolling the balls in)
3 tbsp maple syrup or honey
1 large lemon, zested and juiced
1. Zest and juice the lemon.
2. Just throw all of the ingredients into your food processor and blitz until the ingredients are fully mixed.
3. Take a spoonful of the mix and roll into a ball then roll the ball in desiccated coconut. Repeat with the rest of the mix.
4. Leave the balls in the freezer for about half an hour to set. They can then be stored in the fridge for up to a week.
